The truffle family counts five varieties which can be used in the kitchen. When you’re looking at the amount of scent and taste, the summer truffle is no powerhouse but rather refined. But this doesn’t make the summer truffle less useful. Especially not now, the season of the summer truffle is going on for a while and the truffle is now at its best, even the colour becomes darker.
When the season of the summer truffle, somewhere around August, gets to its end, the Autumn truffle takes over. De Autumn truffle is just like the other varieties, a kind of its own with its own season in which the truffle ripens. The Autumn truffle is slightly darker in color than the summer truffle and has more scent and flavor. The winter truffle is even a step further. Almost as black on the inside as on the outside, beautiful fragrant and a beautiful full truffle taste.
The white truffle is a story of its own and has the most scent of all five. The season starts in November and ends in January. The white truffle is the most appreciated and is by far the most expensive one. Also the bianchetti truffle is a stranger in our midst. In terms of appearance this truffle looks like the white one, but the scent and flavor is somewhat gassy and less refined.
Catch the smell and taste
Summer truffles have a subtile truffle flavor. To avoid losing the flavor add the truffle, preferably thinly sliced, at the last minute to your dishes. Components like risotto, scrambled eggs, mashed potatoes or pasta are good companion to the truffle flavor. The use of mushrooms can even support that taste. Avoid flavors that are to strong for the truffle like raw onions or tomato, find it in the subtlety and have succes with this special seasonal product, the summer truffle.
