Truffles are one of the most delicate foods in the world. Unfortunately the black truffle from Europe is not available anymore, but luckily we have some friends on the other side of the world. We go down under and we are happy that we can provide you with the Australian black winter truffle.
Australian black winter truffle
Australian black winter truffles are available during the Australian winter (June till September), which coincides with the European summer. The truffle is exactly the same species as the European version, also known as Perigord truffles. In Australia it all started back in the 80’s when they inject the roots of oak and hazelnut saplings with the spores of the black truffle. It took them five years before the trees produced the truffles. Nowadays there are over 200 truffle farms throughout Australia growing Australian Black Winter truffles.
Sizes and availability
Of course there are different sizes and variations of the truffle available. We have some jewels which are perfectly round, beautiful dark flesh, firm and dry. This is the highest quality in terms of presentation, flavour and aroma. Besides those we also have truffles available which taste and aroma are outstanding but only the shape is not that perfect as the high quality ones.
So it is up to you how you want to use your truffles. We have them available for any of your needs. The truffles are harvested over the weekends, to ensure the best freshness. Finally they will be packed in vacuum bags on their way to you in thermoboxen with ice so they keep their outstanding quality.
