Pertuis is the place to be for the Aspargus lovers. It is the asparagus region of France. The green asparagus are perfect in spring and have an extraordinary taste. Since the early 19th century, Pertuis asparagus has been cultivated in the Provence.
The Pertuis asparagus are harvested on the edge of the Luberon mountains, in the village of Pertuis, between Vaucluse and Bouches-du-Rhône. This area is perfect thanks to the lightness and fertility of the sandy soil.
Unlike white asparagus, the pertuis aspargus are harvested when the top or head is at least 10 centimeters above the ground. First the top of the aspargus turns violet and after a while the stem turns green.
In Pertuis, they say that asparagus are only real Pertuis Aspargus when one third of its length is green and other part is still white.

The Pertuis Asparagus are not always available, as substitute there is the south American version from Peru for example. So you can have the green asparagus all year long but not always the most delicate Pertuis ones.
